Being locked up in your home has made us all a little more creative when it comes to cooking for the family.

Many of us are missing friends and other family members. Those traditional meal-time gatherings have been taken off the menu, so we came up with these  8 Easy Vegan Recipes for a 'virtual dinner party', in true vegan style.

Easy Vegan Recipe # 1

Super Summer Spritz

A great way to begin the summer with an easy vegan recipe idea for cocktails.A great way to begin the summer with an easy vegan recipe idea for cocktails.

The Aperol Spritz is a light, sparkling dry cocktail, perfect for long summer days in the garden.

All you need is a large wine glass; we can build this in the glass with a quick stir, no need for any specialized equipment for this sizzler.

Ingredients:

  1. 45 ml Aperol
  2. 60 ml or Prosecco
  3. 25 ml or Soda Water
  4. Large Wine Glass
  5. Ice

Method:

Just mix it in the glass, easy-peasy. The specs for the Aperol spritz have always been subject to mood. If you want it a bit boozier, knock the Aperol and Prosecco up a bit.

If you want a more relaxed, drier drink, tone down the Prosecco and add more soda water. The Aperol Spritz is a chameleon of a cocktail, able to morph to your desires. 

Tip:  When deciding on bubbles, using a quality Prosecco is an absolutely excellent idea, though by no means the only one. You can also carbonize a good quality white wine, that's if you are a proud owner of a soda stream (other brands are available). And, don't forget the orange slices for garnish. An olive or two is a welcome addition but optional.

Remarkable Rum Cocktail

The much loved Rum Cocktail, but with a difference.

With the weather picking up and bars still shut, here's the second of our cocktail choices - easy to make and extremely palatable. This one will go down well in a sunny garden.

A perfect Daiquiri has the basic trio of flavors, rum, lime and sugar. Let's shake it up a bit ...

Ingredients:

  1. 50 ml rum (Classic calls for white rum)
  2. 20 ml of fresh lime juice
  3. Two bar spoons / teaspoons of sugar or 10 ml of simple syrup.

Tip: Always taste as you go. You're aiming for light and refreshing with a cleansing sensation washing over your palate as you sip.

Method:

No cocktail shaker? Don't worry, you can use any container with a good tight seal to shake this one up. (Tupperware, Nutribullet cups, etc.)

Tips: To switch up your Rum Daiquiri, here's a couple of things you can change to create your own versions ...

  1. Swap out classic white rum, and try different spiced rums, gold or dark rums for a more intense rum hit.
  2. Use sugar alternatives or flavors, agave, maple syrup or coconut sugar.
  3. Fruit purees. Easy to make at home, take some frozen berries or fruit, blend it up and add about 30-40 ml to your cocktail.

And, just imagine how impressed your family and friends will be when they see you create this little beauty. Nailed it!

Easy Vegan Canapés

Now that you've mastered the cocktails, let's move on to the next course. 

Two of the most versatile vegetables in the organized larder are potatoes and mushrooms. There's just so much you can create with these two staples. The following easy vegan recipes are two of the most appetizing starters out there and are sure to impress your virtual dinner guests.

Easy Vegan Recipe # 3

Jersey New Boats

Ingredients: 

  • 500g potatoes (Jersey-new or small Cypriot)
  • Rock salt to season
  • Cracked black pepper to season 
  • 100 gm vegan crème fraîche
  • 2 cloves of crushed garlic
  • 50g chopped chives / dill
  • Chopped flat leaf parsley

Method:

  • Preheat the oven to 200 ° C, 180 ° C or gas mark 6. Prick the potatoes with the tip of a knife, toss them with olive oil and spread out on a baking tray. Season with salt and bake for 45 mins, turning halfway.
  • Mix the crème fraîche and minced garlic then season with salt and pepper.
  • Finely slice the spring onions on the diagonal and set aside then half the chives with the vegan crème-fraîche and a good grind of black pepper and a pinch of sea salt.
  • Let the potatoes cool for 10 mins before handling, so they aren't piping hot. Cut in half across the middle so you still have both ends of the potatoes in tact, standing on the cut end.
  • Scoop out a small half circle on top of each baked new potato, so it looks like a little tatty boat - season with a little salt and pepper. 
  • Add a heaped teaspoon of the crème-fraîche mixture into each potato.
  • Garnish with your choice of either chopped dill or parsley with the sliced ​​spring onion and remaining chives, plus a little more black pepper.

Mushroom Pate Pita Triangles

Ingredients: 

  • 50g vegan spread for frying
  • 1 small onion, chopped
  • 2 garlic cloves, crushed
  • 375g button mushrooms, finely chopped
  • 2 tablespoons vegan crème fraîche
  • 3 tablespoons finely chopped flat-leaf (Italian) parsley
  • 6 Pita, plain or wholemeal (whole-wheat) pita bread

Method:

  • Melt the vegan butter or plant-based spread in a large frying pan. Sauté the onion and garlic over medium heat for 2 minutes, or until softened. Increase the heat, add the mushrooms and cook for 5 minutes, or until the mushrooms are soft and most of the liquid has evaporated. Leave to cool for 10 minutes.
  • Add crème fraîche and season with sea salt and cracked black pepper.
  • Cover and refrigerate for 4-5 hours to allow the flavors to develop.
  • Once the pate is ready, using a toaster, toast the pita bread or flatbread then cut into triangular slices. Pitas are a great choice as they are thin and toast well, they also have a curved surface, great for holding the pate. 

Tip: If you do not have a food processor, chop the mushroom until a fine consistency, then follow all the other steps.

Easy Vegan Recipe # 5

Spinach and Vegan Feta Puff Pastry Parcels

These are a tasty twist on the traditional cheese and spinach pockets.

The beauty of these vegan feta and spinach puff pastry bites is that you get so much more out of just one sheet of puff pastry because there's a higher filling to pastry ratio.

Tip: You could also turn these dinner party favorites into little canapes as well, by cutting smaller pastry squares.

Ingredients:

  • 200g puff pastry
  • 100g baby spinach
  • 150g vegan feta cheese
  • Salt and pepper to taste

Method:

  • Pre-heat oven to 200 ° C / 400 ° F / Fan 180 ° C / Gas Mark 6.
  • Place a baking tray in the oven to get nice and hot. Roll out the puff pastry, about 3mm thick.
  • Cut into four squares around 12cm x 12cm, 
  • Crumble the vegan feta and mix with the spinach in a bowl season with salt and pepper. Place a bundle of mixture in the middle of each piece of pastry
  • Brush the edges and bring them together in the middle, squeezing to make sure they stick
  • Place in the oven for 15 minutes or until golden brown.
  • Serve on a bed of rocket or pea shoot salad of your choice
  • Drizzle over with the Chimichurri dressing.

Ingredients for the dressing:

  • 1 cup fresh flat-leaf parsley, trimmed or thick stems
  • 3-4 garlic cloves
  • 2 tbsps fresh oregano leaves
  • 1/3 cup extra virgin olive oil
  • 2 tbsp red or white wine vinegar
  • 1/2 tsp sea salt
  • 1/8 tsp ground black pepper.
  • 1/4 tsp red pepper flakes

Method of dressing:

Combine all dressing ingredients into a blender and blend until coarsely chopped and liquidated.

Easy Vegan Recipe # 6

Vegan Wellington Roast

Vegan Wellington, for me, is a labour of love and is one of our most favourite easy vegan meals. Which is why we included it at the end of our 30 Day Easy Vegan Challange.Vegan Wellington - A Sunday roast classic.

The difference between vegetarian and vegan Wellington is quite simple: you don't need eggs in the vegan version and it tastes just as good, if not better.

We love it so much we've included this recipe in the 30 Day Vegan Challenge . Other recipes include a luxurious vegan gravy, a sumptuous mushroom duxelle to coat the wellington mixture and a rich cranberry and orange sauce too.

Vegan Lemon & Ginger Cheesecake

Now, it's not one of our most healthy or easy vegan recipes, but it's definitely worth the calories for sheer indulgence and bliss factor.

So, not only is this zinger a great way to round off your virtual dinner party, it's a tribute to any cheat-day for dieters, as every mouthful is a treat for the taste buds and a welcome reward for a difficult week of counting calories!

Ingredients for the base:

  • 2 x packets of Biscoff biscuits
  • 75g coconut oil / vegan sunflower butter
  • 1 tsp vanilla extract
  • pinch of salt
  • 1 thumb-size piece of fresh ginger (to be halved)

Method for the base:

  • Melt the vegan spread or sunflower butter and set aside.
  • Put the biscuits, melted vegan spread, sugar, vanilla, grated ginger and salt into a kitchen blender and pulse until the mixture starts to hold together.
  • Tip the mixture into the prepared dish and smooth the top.
  • Place in the fridge to chill and set, for about 30 minutes.

Tip:  Perfect recipe to serve with your favorite dessert wine.

Ingredients for the filling:

  • 500g dairy-free cream cheese
  • 2 lemons, grated rind and juice
  • 1 tsp vanilla extract
  • 50g icing sugar
  • 1 lemon, sliced
  • half of the ginger grated

Method of filling:

  • Put the cream cheese, grated lemon rind and juice, grated ginger and vanilla into a bowl and beat well.
  • Sieve the icing sugar into the bowl and stir to combine.
  • Tip the mixture onto the prepared base and spread the top smooth.
  • Chill for at least a couple of hours before serving.
  • Thinly slice the lemon, on each slice cut one side only into the middle of the slice. Twist the slice and place these in a circle on the top of the cheesecake.

Easy Vegan Recipe # 8

After Dinner Vegan Chocolates

The most satisfying end to a casual yet elegant evening is coffee and chocolate.

This minty vegan version of the classic after dinner mint uses good quality dark chocolate and peppermint essence. You can get creative with the flavors here too ...

Ingredients:

  • 320 g icing sugar
  • 1/2 tsp peppermint extract
  • 2 tsp liquid glucose
  • 4 tsp water
  • 320g dark  chocolate

Tip: This recipe is for peppermint creams but if you're feeling bold, swap the mint for a different flavor; orange blossom or rose extract in dark chocolate is blissful. Use matching food coloring in the syrup mix to compliment the flavor you chose.

Method:

  • In a bowl, mix the glucose syrup, water, peppermint extract and a few drops of food coloring if you wish.
  • Add the icing sugar and then use your hands to mix together really well until a smooth, workable dough is formed. If the dough is too crumbly, add 1/2 tsp water and knead well. If it is too wet, add some icing sugar until it is the perfect consistency.
  • Dust two sheets of parchment paper with icing sugar and place the mixture between them. Roll out to the desired thickness.
  • Using a cutter, stamp out the mints then place onto a baking tray dusted with more icing sugar. Dust the top and cover loosely with cling film.
  • Leave for at least an hour at room temperature before turning the mints over, then leave overnight for them to dry and harden completely. 
  • The next day, melt the chocolate and dip the mints, placing on another piece of parchment paper to set. Once set, they are ready to enjoy!
