Being locked up in your home has made us all a little more creative when it comes to cooking for the family.
Many of us are missing friends and other family members. Those traditional meal-time gatherings have been taken off the menu, so we came up with these 8 Easy Vegan Recipes for a 'virtual dinner party', in true vegan style.
Enjoy these eight easy vegan recipe ideas as we take your taste buds from lock-down to let-free and smashing into Summer.

You can still have a dinner party while in lock-down? Get clever with your PC or phone, download Zoom, Google Hangouts or WhatsApp and get your dinner guests to join you. You can even go all out and dress up for the occasion too.
Now that we're heading into Summer, we know it's still not the done thing to go out to festivals or large gatherings, but who's not to say you can't enjoy the taste of Summer in your own backyard.

Super Summer Spritz
The Aperol Spritz is a light, sparkling dry cocktail, perfect for long summer days in the garden.
All you need is a large wine glass; we can build this in the glass with a quick stir, no need for any specialized equipment for this sizzler.

Just mix it in the glass, easy-peasy. The specs for the Aperol spritz have always been subject to mood. If you want it a bit boozier, knock the Aperol and Prosecco up a bit.
If you want a more relaxed, drier drink, tone down the Prosecco and add more soda water. The Aperol Spritz is a chameleon of a cocktail, able to morph to your desires.
Tip: When deciding on bubbles, using a quality Prosecco is an absolutely excellent idea, though by no means the only one. You can also carbonize a good quality white wine, that's if you are a proud owner of a soda stream (other brands are available). And, don't forget the orange slices for garnish. An olive or two is a welcome addition but optional.
Remarkable Rum Cocktail
The much loved Rum Cocktail, but with a difference.
With the weather picking up and bars still shut, here's the second of our cocktail choices - easy to make and extremely palatable. This one will go down well in a sunny garden.

A perfect Daiquiri has the basic trio of flavors, rum, lime and sugar. Let's shake it up a bit ... Ingredients:

Now that you've mastered the cocktails, let's move on to the next course.
Two of the most versatile vegetables in the organized larder are potatoes and mushrooms. There's just so much you can create with these two staples. The following easy vegan recipes are two of the most appetizing starters out there and are sure to impress your virtual dinner guests.

Spinach and Vegan Feta Puff Pastry Parcels
These are a tasty twist on the traditional cheese and spinach pockets.
The beauty of these vegan feta and spinach puff pastry bites is that you get so much more out of just one sheet of puff pastry because there's a higher filling to pastry ratio.
Tip: You could also turn these dinner party favorites into little canapes as well, by cutting smaller pastry squares.

Combine all dressing ingredients into a blender and blend until coarsely chopped and liquidated.
Vegan Wellington Roast
The difference between vegetarian and vegan Wellington is quite simple: you don't need eggs in the vegan version and it tastes just as good, if not better.

So, not only is this zinger a great way to round off your virtual dinner party, it's a tribute to any cheat-day for dieters, as every mouthful is a treat for the taste buds and a welcome reward for a difficult week of counting calories!

This minty vegan version of the classic after dinner mint uses good quality dark chocolate and peppermint essence. You can get creative with the flavors here too ...

Tip: This recipe is for peppermint creams but if you're feeling bold, swap the mint for a different flavor; orange blossom or rose extract in dark chocolate is blissful. Use matching food coloring in the syrup mix to compliment the flavor you chose.
